Stephanie Nelson, registered dietitian and lead nutritionist for MyFitnessPal, instructed Insider {that a} bowl with white beans and farro, a nutty grain widespread in Italian cooking, is a fast and satisfying lunch choice.

“This recipe packs within the protein,” mentioned Nelson. “The

needs to be primarily plant-based, so a farro and bean salad matches the mould precisely.” 

To make this dish, chop and sauté an eggplant with garlic in olive oil, then add cooked farro, white beans, a small quantity of tomato sauce, and a sprinkle of thyme and oregano. Prime with feta cheese, if desired.
